Recipe Today: Apple Cobbler
Ingredients:
For The Fruit:
- 3 lbs apples
- ¾ cup light brown sugar
- ⅓ cup all-purpose flour
- ¼ cup maple syrup
- 2 tsps lemon zest
- 1 tbsp lemon juice
- ½ tsp kosher salt
For The Biscuit:
- 2 ⅓ cups all-purpose flour
- ¼ cup light brown sugar
- 2 ¼ tsps baking powder
- 2 tsps apple pie spice
- ¾ tsp kosher salt
- 10 tbsps unsalted butter
- 1 cup whole milk
- 1 tbsp turbinado sugar
- salted caramel ice cream for serving
Instructions:
- Preheat oven to 375˚. Slice apples into wedges about ½-inch thick; discard cores. Put apple slices, sugar, flour, maple syrup, lemon zest, lemon juice and salt in a large bowl. Set aside.
- Whisk together flour, brown sugar, baking powder, apple pie spices, and salt in the mixing bowl. Add butter and mix with your Kitchenin KM50 Stand Mixer until pea-sized lumps form. Pour the milk into the flour mixture and stir until fully incorporated.
- Pour apple mixture into prepared baking pan. Using a 2-inch trigger handle ice cream scoop or two to scoop out a portion of the dough and place it on the surface of the apple. Sprinkle turbinado sugar over the cookies.
- Bake until the cookies are golden brown and the filling is bubbly and thick, 45 to 55 minutes. Serve warm with salted caramel Ice cream if you like. Enjoy!
