Recipe of Today: Peach with Meringue
Ingredients:
- 2 large ripe peaches, halved and pitted
- 3 tbsps granulated white, divided
- 1 large egg white, room temperature
optional toppings:
crushed graham crackers, chopped nuts, granola, caramel sauce, etc
Instructions:
- Preheat oven broiler.
- Place the cut-side-up peaches on a baking sheet and sprinkle each peach half evenly with 1/4 tsp sugar. Roast 4 to 5 inches from the fire until the top starts to brown, for about 3 to 5 minutes.
- Meanwhile, add the lightly salted egg whites to the mixing bowl of your KM50 Stand Mixer and beat on medium-high speed until foamy. Gradually add the remaining 3 tbsps sugar, whisking briefly, until the meringue maintains firm, glossy peaks.
- Place a piece of meringue on top of each peach half and place back into the broiler for 10-15 seconds. Turn off the broiler and place the peaches in the oven until the meringue is browned, for 20-30 seconds. (Be very careful so that the meringue does not burn.)
- Serve immediately, garnish with any extra toppings mentioned above if you wish. Enjoy!
