Recipe of Today: Oatmeal Cookies
Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 3 cups old-fashioned oats
- 1 cup raisins or chocolate chips (optional)
Instructions:
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In your Kitchenin KM50 Stand Mixer bowl, combine the softened butter, granulated sugar, and brown sugar. Mix on medium speed until the mixture is creamy and well combined, about 2 minutes.
- Add the eggs, one at a time, mixing well after each addition. Then, add the vanilla extract and mix until fully incorporated.
- In a separate mixing bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients in your Kitchenin Stand Mixer. Mix on low speed until just combined.
- Stir in the oats until evenly distributed. If you're using raisins or chocolate chips, fold them into the cookie dough.
- Drop rounded tbsps of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. You can also use a cookie scoop for uniform cookies.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft. Be careful not to overbake; the cookies will continue to firm up as they cool.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Serve your classic oatmeal cookies with a glass of cold milk or a hot cup of coffee. Enjoy!
