Recipe of Today: Oatmeal Cookies

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 3 cups old-fashioned oats
  • 1 cup raisins or chocolate chips (optional)

Instructions:

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  • In your Kitchenin KM50 Stand Mixer bowl, combine the softened butter, granulated sugar, and brown sugar. Mix on medium speed until the mixture is creamy and well combined, about 2 minutes.
  • Add the eggs, one at a time, mixing well after each addition. Then, add the vanilla extract and mix until fully incorporated.
  • In a separate mixing bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients in your Kitchenin Stand Mixer. Mix on low speed until just combined.
  • Stir in the oats until evenly distributed. If you're using raisins or chocolate chips, fold them into the cookie dough.
  • Drop rounded tbsps of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. You can also use a cookie scoop for uniform cookies.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft. Be careful not to overbake; the cookies will continue to firm up as they cool.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Serve your classic oatmeal cookies with a glass of cold milk or a hot cup of coffee. Enjoy!
