Recipe of Today: Italian Stuffed Pasta Shells
Ingredients:
- 1 pound ground beef
- 1 cup chopped onion
- 1 minced garlic clove
- 2 cups hot water
- 1 can/12 ounces tomato paste
- 1 tbsp beef bouillon granules
- 1 ½ tsps dried oregano
- 1 large egg, lightly beaten
- 2 cups 4% cottage cheese
- 2 cups shredded part-skim mozzarella cheese
- ½ cup grated Parmesan cheese
- 24 jumbo pasta shells, cooked and drained
Instructions
- Get a large frying pan, cook beef, onion, garlic, ground beef, over medium heat, until meat is no longer pink; drain off the water. Then add water, tomato paste, broth and oregano. Reduce heat; simmer, uncovered, 30 minutes.
- At the same time, combine egg, cottage cheese, 1 cup mozzarella, and Parmesan cheese with Kitchenin KM50 Stand Mixer until well mixed. Fill jumbo pasta shells with the cheese mixture.
- Preheat oven to 350°. Arrange the pasta shells in a greased 3-Qt bakeware. Pour meat sauce over the shells. Cover; bake for 30 minutes. Uncover; sprinkle with remaining mozzarella cheese. Bake until cheese is melted, for about 5 minutes. Enjoy!
