Recipe of Today: Chocolate Cherry Cake

Ingredients:

For The Cake:

  • 2 cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp pure vanilla extract
  • 1 cup boiling water
  • 1 ½ cups pitted and chopped cherries (fresh or frozen)

For The Chocolate Ganache:

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

For The Cherry Filling:

  • 1 ½ cups pitted and chopped cherries
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice

For The Whipped Cream:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions:

Prepare The Cherry Filling:

  • In a saucepan, combine the chopped cherries, granulated sugar, and lemon juice.
  • Cook over medium heat until the cherries soften and release their juices, about 10 minutes. Remove from heat and let it cool.

Prepare The Chocolate Cake:

  • Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
  • In your Kitchenin KM50 Stand Mixer, combine the flour, sugar, cocoa, baking powder, baking soda, and salt.
  • Add eggs, buttermilk, vegetable oil, and vanilla extract. Mix on low speed until well combined.
  • Stir in the boiling water until the batter is smooth. Gently fold in the 1 ½ cups of chopped cherries. Then pour the batter evenly into the prepared pans.
  • Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Prepare The Chocolate Ganache:

  • In a microwave-safe bowl, heat the chocolate chips and heavy cream in 30-second intervals, stirring each time, until the mixture is smooth.
  • Let it cool for a few minutes until it thickens slightly.

Assemble The Cake:

  • Place one cake layer on a serving plate. Spread the cherry filling over the top. Place the second cake layer on top.
  • Pour the chocolate ganache over the cake, allowing it to drip down the sides.

Prepare The Whipped Cream:

  • Turn on your Kitchenin KM50 Stand Mixer, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Pipe the whipped cream around the edges of the cake.

Decorate:

  • Garnish the cake with additional fresh cherries or chocolate shavings, if desired. Serve and enjoy!
