Recipe of Today: Chocolate Cherry Cake
Ingredients:
For The Cake:
- 2 cups all-purpose flour
- 1 ¾ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp pure vanilla extract
- 1 cup boiling water
- 1 ½ cups pitted and chopped cherries (fresh or frozen)
For The Chocolate Ganache:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
For The Cherry Filling:
- 1 ½ cups pitted and chopped cherries
- ¼ cup granulated sugar
- 1 tbsp lemon juice
For The Whipped Cream:
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions:
Prepare The Cherry Filling:
- In a saucepan, combine the chopped cherries, granulated sugar, and lemon juice.
- Cook over medium heat until the cherries soften and release their juices, about 10 minutes. Remove from heat and let it cool.
Prepare The Chocolate Cake:
- Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
- In your Kitchenin KM50 Stand Mixer, combine the flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add eggs, buttermilk, vegetable oil, and vanilla extract. Mix on low speed until well combined.
- Stir in the boiling water until the batter is smooth. Gently fold in the 1 ½ cups of chopped cherries. Then pour the batter evenly into the prepared pans.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Prepare The Chocolate Ganache:
- In a microwave-safe bowl, heat the chocolate chips and heavy cream in 30-second intervals, stirring each time, until the mixture is smooth.
- Let it cool for a few minutes until it thickens slightly.
Assemble The Cake:
- Place one cake layer on a serving plate. Spread the cherry filling over the top. Place the second cake layer on top.
- Pour the chocolate ganache over the cake, allowing it to drip down the sides.
Prepare The Whipped Cream:
- Turn on your Kitchenin KM50 Stand Mixer, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Pipe the whipped cream around the edges of the cake.
Decorate:
- Garnish the cake with additional fresh cherries or chocolate shavings, if desired. Serve and enjoy!
