Recipe of Today: Apple Cinnamon Scones
Ingredients:
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 1 tbsp baking powder
- ½ tsp sea salt
- ½ tsp ground cinnamon
- ½ cup unsalted butter, cold and cubed
- ½ cup buttermilk
- 1 large egg
- 1 tsp vanilla extract
- 1 cup diced apples
For The Glaze:
- 1 cup powdered sugar
- 2 tbsps milk
- ¼ tsp vanilla extract
Instructions:
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In the mixing bowl of your Kitchenin KM50 Stand Mixer, combine the flour, sugar, baking powder, salt, and ground cinnamon.
- Add the cold, cubed butter to the dry ingredients. Using the paddle attachment, mix on low speed until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the buttermilk, egg, and vanilla extract.
- Slowly pour the wet ingredients into the dry ingredients while the mixer is on low speed. Mix just until the dough comes together.
- Gently fold in the diced apples until evenly distributed in the dough.
- Turn the dough out onto a floured surface and pat it into a circle about 1 inch thick. Cut the circle into 8 wedges.
- Place the scones on the prepared baking sheet and bake for 15-18 minutes or until they are golden brown.
- While the scones are baking, prepare the glaze. Whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Once the scones are done, let them cool on a wire rack for a few minutes. Drizzle the glaze over the warm scones. Serve and enjoy!
