Recipe of Apricot Coconut Balls
Ingredients:
- 1 cup dried apricots
- ½ cup desiccated coconut
- ½ cup rolled oats
- ¼ cup honey
- ¼ cup almond butter
- 1 tsp vanilla extract
- a pinch of salt
- extra desiccated coconut for coating
Instructions:
- Start by chopping the dried apricots into smaller pieces. This will make it easier for your stand mixer to process them.
- In the bowl of your Kitchenin KM50 Stand Mixer, add the chopped dried apricots, desiccated coconut, rolled oats, honey, almond butter, vanilla extract, and a pinch of salt.
- Using the paddle attachment, start your Kitchenin KM50 Stand Mixer on low speed to blend the ingredients. Gradually increase the speed to medium. Mix until the mixture begins to come together and forms a sticky dough. This usually takes a couple of minutes.
- Once the mixture is well combined and has the right consistency, stop the mixer. Take small portions of the mixture and roll them into bite-sized balls using your hands. If the mixture is too sticky to handle, you can lightly wet your hands with water to prevent sticking.
- Roll each ball in the extra desiccated coconut until they're evenly coated. This gives the apricot coconut balls a delightful outer layer.
- Place the apricot coconut balls on a baking sheet or a plate and refrigerate them for about 30 minutes. Then serve and enjoy!
