Recipe of Today: Vampire Teeth Cookie Sandwiches
Ingredients:
For The Chocolate Chip Cookies:
- 1 stick unsalted butter, softened
- ⅓ cup sugar
- ¼ cup brown sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 ¼ cups all-purpose flour
- ½ tsp kosher salt
- 1 tsp baking soda
- 1 ½ cups semisweet chocolate chips
For The Buttercream Frosting:
- ¼ cup butter
- ¼ cup shortening
- ½ tsp vanilla extract
- ½ pound confectioners sugar
- ½ tbsp hot water
- red food coloring
Other:
- 36 mini marshmallows
- 24 slivered almonds
Instructions:
For The Chocolate Chip Cookies:
- Preheat your oven to 350°F.
- In the mixing bowl attached to your Kitchenin KM50 Stand Mixer, combine the softened unsalted butter, sugar, brown sugar, and vanilla extract. Mix until creamy. Add the egg and beat well.
- In a separate bowl, whisk together the all-purpose flour, kosher salt, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the semisweet chocolate chips.
- Drop rounded tablespoons of cookie dough onto ungreased baking sheets. Bake for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool completely before moving on.
For The Buttercream Frosting:
- In a separate mixing bowl, combine the butter, shortening, and vanilla extract using your Kitchenin KM50 Stand Mixer. Mix until smooth.
- Gradually add the confectioners sugar and hot water. Continue mixing until the frosting is light and fluffy.
- Add 4-6 drops of red food coloring to achieve the desired vampire red color.
Assembling The Vampire Teeth Cookie Sandwiches:
- Once your chocolate chip cookies and red buttercream frosting are ready, it's time to assemble your vampire teeth cookie sandwiches.
- Take one cookie and pipe a generous amount of red buttercream on the flat side using a piping bag.
- On the flat side of another cookie, place mini marshmallows along the curved edge, creating the vampire's teeth. Gently press the marshmallows into the frosting to secure them.
- Carefully sandwich the marshmallow-adorned cookie with the frosted one, pressing them together to form the vampire's mouth.
