Recipe of Today: Red Velvet Bundt Cake
Ingredients:
- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 ½ tbsps unsweetened cocoa powder
- 1 ½ cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tbsps red food coloring
- 1 tsp white vinegar
- 1 tsp vanilla extract
For The Cream Cheese Glaze:
- 4 ounces cream cheese, softened
- ¼ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2-3 tbsps milk
Instructions:
- Preheat your oven to 350°F. Grease and flour a standard-sized Bundt pan.
- In the mixing bowl, sift together the flour, sugar, baking powder, baking soda, salt, and cocoa powder. Mix with your Kitchenin KM50 Stand Mixer until well combined.
- In your Kitchenin KM50 Stand Mixer, combine the vegetable oil, buttermilk, eggs, red food coloring, white vinegar, and vanilla extract. Mix on medium speed until all the wet ingredients are fully combined and the mixture has a smooth consistency.
- Gradually add the dry ingredients to the wet mixture while the mixer is running on low speed. Continue mixing until the batter is smooth and free of lumps. Scrape down the sides of the bowl as needed.
- Pour the red velvet cake batter into the prepared Bundt pan. Use a spatula to smooth the top for even baking.
- Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Be sure not to overbake.
- Allow the cake to cool in the pan for about 10 minutes, then gently invert it onto a wire rack to cool completely.
For The Cream Cheese Glaze:
- While the cake is cooling, prepare the cream cheese glaze. In a separate mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract, continuing to mix until well combined.
- Add milk, one tbsp at a time, until you achieve your desired glaze consistency. You can make it thicker or thinner, depending on your preference.
- Once the cake is completely cooled, drizzle the cream cheese glaze evenly over the top. Let it set for a few minutes before slicing and serving. Enjoy!
