Recipe of Today: Peanut Butter Cookies

Ingredients:

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp sea salt

Instructions:

  • Preheat your oven to 350°F to get started.
  • In the mixing bowl of your Kitchenin KM50 Stand Mixer, combine creamy peanut butter and granulated sugar. Beat until well blended and creamy.
  • Crack in the egg and pour in the vanilla extract. Mix until the ingredients are fully incorporated.
  • In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the peanut butter mixture. Continue mixing until you have a smooth cookie dough.
  • Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper, leaving some space between each.
  • Use a fork to gently press down on each cookie, creating a crosshatch pattern on the top.
  • Pop the baking sheet into the preheated oven and bake for about 10 minutes or until the edges are golden brown.
  • Once baked, let the cookies cool on the sheet for a few minutes before transferring them to a wire rack. Enjoy your delightful Peanut Butter Cookies!

Pro Tip: For an extra touch, sprinkle some sea salt on top of the cookies before baking to enhance the peanut butter flavor!
