Recipe of Today: Peach Cobbler

Ingredients:

For The Filling:

  • 8 ripe peaches, peeled and sliced
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp sea salt
  • 1 tbsp cornstarch
  • 2 tbsp unsalted butter

For The Topping:

  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt
  • ½ cup unsalted butter
  • ¼ cup boiling water

Instructions:

  • Preheat oven to 375°F.
  • In the bowl of your Kitchenin KM50 Stand Mixer, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, sea salt, and cornstarch. Mix everything together on low speed until the peaches are coated and the sugar is dissolved.
  • Transfer the peach mixture to a 10-inch baking dish and dot the top with the butter pieces.
  • In a separate bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and sea salt. Add the cold butter pieces and mix everything together on medium-low speed using the paddle attachment of your Kitchenin KM50 Stand Mixer until the mixture is crumbly.
  • Add the boiling water to the topping mixture and mix on low speed until the batter is smooth.
  • Drop spoonfuls of the batter over the peaches, leaving some gaps so the filling can bubble through.
  • Bake the peach cobbler for 45-50 minutes, until the topping is golden brown and the filling is bubbly.
  • Let the cobbler cool for a few minutes before serving. Serve with a scoop of vanilla ice cream if desired. Enjoy!
