Recipe of Today: Marshmallow

Ingredients:
- 6 tbsps water
- 1 cup honey
- 2 packets unflavored gelatin
- 2 tsps pure vanilla extract
Instructions:
- In a small bowl, whisk the gelatin into the water and microwave for 30 seconds.
- Pour honey into the mixing bowl of Kitchenin Stand Mixer. Add vanilla extract and warm gelatin mixture.
- Blend with the whisk attachment for 12-15 minutes until the mixture is white and fluffy and has quadrupled in size.
- Spread cornstarch over a casserole.
- Scoop the marshmallow mixture into a greased, well-starched casserole dish, smoothing the top so that it is flush with a spatula. Let it stand for at least 6 hours. Best overnight. When done, it will be sticky but feel like a sponge.
- Place on a surface dusted with cornstarch and cut to desired size. Store in a plastic bag in the fridge. Enjoy!
