Recipe of Today: Lemon Bars
Ingredients:
For The Crust:
- 1 cup all-purpose flour
- ¼ cup powdered sugar
- ½ cup unsalted butter, softened
For The Filling:
- 1 cup granulated sugar
- 2 tbsps all-purpose flour
- ½ tsp baking powder
- pinch of salt
- 2 large eggs
- zest of 1 lemon
- ¼ cup fresh lemon juice
For The Topping:
- powdered sugar, for dusting
Instructions:
- Preheat your oven to 350°F and grease a 9x9-inch baking pan.
- In the Kitchenin KM50 Stand Mixer bowl, combine the flour, powdered sugar, and softened butter for the crust. Mix on low speed until the mixture resembles coarse crumbs.
- Press the crust mixture firmly into the bottom of the prepared baking pan. Bake the crust in the preheated oven for about 15-18 minutes or until it's lightly golden.
- While the crust is baking, prepare the filling. In a separate bowl, whisk together the granulated sugar, flour, baking powder, and a pinch of salt.
- Grab your Kitchenin KM50 Stand Mixer bowl, beat the eggs until they're well combined. Add the lemon zest and lemon juice, and mix until smooth.
- Gradually add the dry ingredient mixture to the egg mixture, mixing until fully incorporated and smooth.
- Pour the lemon filling over the baked crust, spreading it evenly.
- Bake the lemon bars for an additional 20-25 minutes or until the filling is set and the edges are lightly golden.
- Remove the baking pan from the oven and let the lemon bars cool completely on a wire rack.
- Once cooled, dust the top of the lemon bars with powdered sugar. Gently cut the lemon bars into squares or bars using a sharp knife. Serve and enjoy!
