Recipe of Today: Lemon Bars

Ingredients:

For The Crust:

  • 1 cup all-purpose flour
  • ¼ cup powdered sugar
  • ½ cup unsalted butter, softened

For The Filling:

  • 1 cup granulated sugar
  • 2 tbsps all-purpose flour
  • ½ tsp baking powder
  • pinch of salt
  • 2 large eggs
  • zest of 1 lemon
  • ¼ cup fresh lemon juice

For The Topping:

  • powdered sugar, for dusting

Instructions:

  • Preheat your oven to 350°F and grease a 9x9-inch baking pan.
  • In the Kitchenin KM50 Stand Mixer bowl, combine the flour, powdered sugar, and softened butter for the crust. Mix on low speed until the mixture resembles coarse crumbs.
  • Press the crust mixture firmly into the bottom of the prepared baking pan. Bake the crust in the preheated oven for about 15-18 minutes or until it's lightly golden.
  • While the crust is baking, prepare the filling. In a separate bowl, whisk together the granulated sugar, flour, baking powder, and a pinch of salt.
  • Grab your Kitchenin KM50 Stand Mixer bowl, beat the eggs until they're well combined. Add the lemon zest and lemon juice, and mix until smooth.
  • Gradually add the dry ingredient mixture to the egg mixture, mixing until fully incorporated and smooth.
  • Pour the lemon filling over the baked crust, spreading it evenly.
  • Bake the lemon bars for an additional 20-25 minutes or until the filling is set and the edges are lightly golden.
  • Remove the baking pan from the oven and let the lemon bars cool completely on a wire rack.
  • Once cooled, dust the top of the lemon bars with powdered sugar. Gently cut the lemon bars into squares or bars using a sharp knife. Serve and enjoy!
