Recipe of Today: Homemade Oreo Cookies
Ingredients:
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp sea salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 tbsp whole milk
For The Filling:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tbsp pure vanilla extract
- 2 tbsps whole milk
Instructions:
- Preheat oven to 350°F and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt.
- In the mixing bowl of your Kitchenin KM50 Stand Mixer, blend together butter and sugar until light and fluffy, for about 2-3 minutes. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract and whole milk, and mix again.
- Gradually add the flour mixture to the butter mixture, mixing until well combined.
- Using a tablespoon to scoop out the dough and roll into balls. Place the balls onto the prepared baking sheets, leaving about 2 inches between each ball.
- Use the palm of your hand to flatten each cookie ball to about 1/2 inch thickness.
- Bake for 10-12 minutes or until the cookies are set and the edges are slightly firm.
- Remove from the oven and cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- To make the filling, turn on your Kitchenin KM50 Stand Mixer and beat together the butter and powdered sugar until light and fluffy. Add vanilla extract and milk, and mix until fully incorporated.
- Once the cookies have cooled completely, spread the filling onto the flat side of one cookie and place another cookie on top to form a sandwich. Repeat until all cookies are filled. Enjoy!
