Recipe of Today: Classic Soufflé

Ingredients:

  • 3 tbsp unsalted butter (for greasing)
  • 3 tbsp granulated sugar (for coating ramekins)
  • 1 cup whole milk
  • ⅓ cup all-purpose flour
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • pinch of salt
  • 4 large egg whites
  • ¼ cup granulated sugar

Instructions:

  • Preheat your oven to 375°F. Grease the ramekins with butter and coat them with sugar, tapping out any excess.
  • In a saucepan, heat the milk until it's warm but not boiling. Get another bowl, whisk together the flour, egg yolks, vanilla extract, and salt. Slowly add the warm milk, whisking continuously.
  • Place the saucepan over medium heat and cook the mixture, stirring constantly until it thickens. Remove from heat and let it cool slightly.
  • In your Kitchenin KM50 Stand Mixer, beat the egg whites until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.
  • Gently fold the egg white mixture into the egg yolk mixture until just combined. Be careful not to deflate the egg whites.
  • Spoon the batter into the prepared ramekins, filling them almost to the top. Run your thumb around the inside edge of each ramekin to create a groove, which helps the soufflé rise evenly.
  • Place the ramekins on a baking sheet and bake in the preheated oven for 18-20 minutes or until the soufflés are puffed and golden.
  • Serve immediately, dusted with powdered sugar if desired. Enjoy the light and airy perfection of this classic soufflé!
