Recipe of Today: Classic Soufflé
Ingredients:
- 3 tbsp unsalted butter (for greasing)
- 3 tbsp granulated sugar (for coating ramekins)
- 1 cup whole milk
- ⅓ cup all-purpose flour
- 4 large egg yolks
- 1 tsp vanilla extract
- pinch of salt
- 4 large egg whites
- ¼ cup granulated sugar
Instructions:
- Preheat your oven to 375°F. Grease the ramekins with butter and coat them with sugar, tapping out any excess.
- In a saucepan, heat the milk until it's warm but not boiling. Get another bowl, whisk together the flour, egg yolks, vanilla extract, and salt. Slowly add the warm milk, whisking continuously.
- Place the saucepan over medium heat and cook the mixture, stirring constantly until it thickens. Remove from heat and let it cool slightly.
- In your Kitchenin KM50 Stand Mixer, beat the egg whites until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.
- Gently fold the egg white mixture into the egg yolk mixture until just combined. Be careful not to deflate the egg whites.
- Spoon the batter into the prepared ramekins, filling them almost to the top. Run your thumb around the inside edge of each ramekin to create a groove, which helps the soufflé rise evenly.
- Place the ramekins on a baking sheet and bake in the preheated oven for 18-20 minutes or until the soufflés are puffed and golden.
- Serve immediately, dusted with powdered sugar if desired. Enjoy the light and airy perfection of this classic soufflé!
