Recipe of Today: Chocolate Truffles

Ingredients:

  • 8 oz dark chocolate, chopped
  • ½ cup heavy cream
  • ¼ cup unsalted butter, room temperature
  • 1 tsp vanilla extract
  • cocoa powder or chopped nuts, for rolling

Instructions:

  • In a saucepan over medium heat, heat the heavy cream until it starts to steam, then remove from heat.
  • Add the chopped chocolate to the saucepan and let it sit for a few minutes until the chocolate starts to melt.
  • Stir the chocolate and cream mixture until it is smooth and all the chocolate is melted.
  • Add the butter and vanilla extract to the mixture and stir until the butter is completely melted and incorporated.
  • Pour the mixture into the mixing bowl of your Kitchenin KM50 Stand Mixer and mix on medium speed for 2-3 minutes until the mixture is smooth and glossy.
  • Cover the bowl with plastic wrap and chill the mixture in the fridge for at least 2 hours or until it is firm enough to shape.
  • Once chilled, use a teaspoon to scoop out small amounts of the chocolate mixture and roll them into balls.
  • Roll the chocolate truffles in cocoa powder or chopped nuts to coat them. Serve and enjoy!
