Recipe of Today: Cannoli

Ingredients:

For The Cannoli Shells:

  • 2 cups all-purpose flour
  • 2 tbsps granulated sugar
  • ¼ tsp salt
  • 2 tbsps unsalted butter, cold and cubed
  • 1 large egg yolk
  • ½ cup sweet Marsala wine
  • 1 egg white (for sealing)

For The Filling:

  • 2 cups ricotta cheese, drained
  • ½ cup powdered sugar
  • ½ tsp vanilla extract
  • ¼ cup mini chocolate chips
  • ¼ cup chopped pistachios

Instructions:

For The Cannoli Shells:

  • In the bowl of your Kitchenin KM50 Stand Mixer, combine the flour, granulated sugar, and salt using the paddle attachment.
  • Add the cold, cubed butter and mix on low speed until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the egg yolk and Marsala wine with Kitchenin Stand Mixer. Gradually add this mixture to the dry ingredients while mixing on low speed.
  • Once the dough comes together, switch to the dough hook attachment and knead for about 5 minutes until the dough is smooth and elastic.
  • Shape the dough into a disc, wrap it in plastic wrap, and let it rest in the refrigerator for at least 1 hour.
  • Roll out the dough on a floured surface until it's very thin. Using a round cutter, cut out circles of dough.
  • Wrap each circle of dough around a cannoli tube or mold, sealing the edge with a bit of egg white.
  • Heat vegetable oil in a deep pan to 350°F. Carefully fry the cannoli shells until golden brown. Remove and let them cool before gently sliding the shells off the tubes.

For The Filling:

  • In the clean bowl of your Kitchenin KM50 Stand Mixer, combine the drained ricotta cheese, powdered sugar, and vanilla extract.
  • Mix on medium speed until the mixture is creamy and smooth.
  • Fold in the mini chocolate chips and chopped pistachios.

Assembling The Cannoli:

  • Using a pastry bag fitted with a star tip, fill each cannoli shell with the ricotta filling. You can also use a spoon to fill them.
  • Dust the filled cannoli with powdered sugar and garnish with extra chocolate chips and chopped pistachios.
  • Serve immediately and enjoy your homemade cannoli!
