Recipe of Today: Baumkuchen Cake

Ingredients:

  • 6 large eggs, at room temperature
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup unsalted butter, melted
  • ½ cup whole milk
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • ¼ tsp sea salt

Instructions:

  • Preheat your oven to 375°F. Grease and line a 9-inch round cake pan with parchment paper.
  • Grab your Kitchenin KM50 Stand Mixer bowl, beat the egg yolks, sugar, and vanilla extract on medium-high speed until pale and creamy in the mixing bowl.
  • In a separate bowl, whisk together the flour, cornstarch, and sea salt. Gradually add the dry ingredients to the egg yolk mixture, alternating with the melted butter and milk. Mix until well combined, creating a smooth batter.
  • In another clean mixing bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter until fully incorporated.
  • Pour a thin layer of batter into the prepared cake pan and spread it evenly. Place the pan in the preheated oven and bake for 2-3 minutes or until the batter sets.
  • Take the pan out of the oven and add another layer of batter on top. Return it to the oven and repeat this process, layer by layer, until all the batter is used up. Each layer should be baked for 2-3 minutes before adding the next.
  • Once all the layers are added, reduce the oven temperature to 350°F and bake the Baumkuchen for about 40-50 minutes or until a toothpick inserted into the center comes out clean.
  • Carefully remove the Baumkuchen from the pan and place it on a wire rack. Let the cake cool completely before serving. Enjoy!
