Recipe of Today: Apple Cinnamon Scones

Ingredients:

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp sea salt
  • ½ tsp ground cinnamon
  • ½ cup unsalted butter, cold and cubed
  • ½ cup buttermilk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup diced apples

For The Glaze:

  • 1 cup powdered sugar
  • 2 tbsps milk
  • ¼ tsp vanilla extract

Instructions:

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • In the mixing bowl of your Kitchenin KM50 Stand Mixer, combine the flour, sugar, baking powder, salt, and ground cinnamon.
  • Add the cold, cubed butter to the dry ingredients. Using the paddle attachment, mix on low speed until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the buttermilk, egg, and vanilla extract.
  • Slowly pour the wet ingredients into the dry ingredients while the mixer is on low speed. Mix just until the dough comes together.
  • Gently fold in the diced apples until evenly distributed in the dough.
  • Turn the dough out onto a floured surface and pat it into a circle about 1 inch thick. Cut the circle into 8 wedges.
  • Place the scones on the prepared baking sheet and bake for 15-18 minutes or until they are golden brown.
  • While the scones are baking, prepare the glaze. Whisk together the powdered sugar, milk, and vanilla extract until smooth.
  • Once the scones are done, let them cool on a wire rack for a few minutes. Drizzle the glaze over the warm scones. Serve and enjoy!
