Recipe of Today: American Flag Pie


For The Crust:

  • 2 ½ cups all-purpose flour
  • 1 tsp sea salt
  • 1 cup cold unsalted butter, cubed
  • 6-8 tbsps ice water

For The Filling:

  • 4 cups fresh strawberries, sliced
  • 1 ½ cups fresh blueberries
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

For The Flag Design:

  • whipped cream or whipped topping
  • additional fresh strawberries and blueberries


Prepare The Crust:

  • In the mixing bowl of your Kitchenin KM50 Stand Mixer, combine the flour and sea salt. Mix on low speed using the paddle attachment.
  • Add the cold butter cubes and mix until the mixture resembles coarse crumbs.
  • Gradually add ice water, one tbsp at a time, while mixing on low speed until the dough comes together.
  • Divide the dough into two equal portions, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Roll Out The Dough and Assemble The Pie:

  • Preheat your oven to 375°F.
  • On a lightly floured surface, roll out one portion of the dough to fit a 9-inch pie dish. Place the dough into the dish and trim the excess.
  • In a large bowl, gently toss the sliced strawberries, blueberries, sugar, cornstarch, lemon juice, and vanilla extract until well combined.
  • Spoon the filling into the prepared pie crust, spreading it evenly.
  • Roll out the second portion of dough and cut it into stars and strips to create the flag design. Arrange the stars and strips to form the flag pattern on top of the pie.

Bake and Serve:

  • Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  • Remove from the oven and let the pie cool completely before serving.
  • Just before serving, garnish the pie with whipped cream or whipped topping, fresh strawberries, and blueberries to complete the flag design. Enjoy!
