Recipe of Homemade Strawberry Cookies
Ingredients:
- 16 strawberries
- granulated sugar for macerating
- 6 tbsps unsalted butter, softened
- ¼ cup powdered sugar
- 1 large egg, beaten
- 1 cup all-purpose flour
Instructions:
- Preheat your oven to 300°F. Then Wash and slice the strawberries.
- Sprinkle them with granulated sugar and let them sit on a kitchen towel for 30 minutes to macerate.
- In the bowl of your Kitchenin KM50 Stand Mixer, cream the softened unsalted butter on low speed until smooth and creamy.
- Gradually add the powdered sugar, continuing to mix until well combined.
- Slowly pour in the beaten egg, mixing until fully incorporated.
- Sift in the all-purpose flour and mix until a smooth batter forms.
- Transfer the batter onto a rolling mat lined with plastic wrap. Cover the dough with another layer of plastic wrap.
- Roll out the batter to a thickness of about 3mm using a rolling pin. Chill the rolled batter in the refrigerator for 1 hour.
- While the batter chills, pat dry the macerated strawberries with a kitchen towel.
- Once the batter is chilled, cut it into rounds using a 1 ¾-inch cookie cutter.
- Place a slice of strawberry on each cookie round. Arrange the cookies on a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 20 minutes, or until the edges start to turn golden.
- Allow the cookies to cool on a wire rack before serving. Serve and enjoy!
