Recipe of Today: Christmas Tree Cupcakes
Ingredients:
For The Cupcakes:
- 1 ½ cups all-purpose flour
- 1 ½ tsps baking powder
- ½ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup whole milk
For The Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
- green food coloring
For The Decoration:
- mini pretzel sticks
- assorted colorful sprinkles
- edible gold stars
Instructions:
- Preheat your oven to 350°F. Line a muffin tin with cupcake liners.
- Grab your Kitchenin KM50 Stand Mixer, whisk together the flour, baking powder, and salt in the mixing bow. Set aside.
- In the mixing bowl of your Kitchenin KM50 Stand Mixer, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
- Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely.
- For the frosting, in the clean mixing bowl of your Kitchenin KM50 Stand Mixer, beat the softened butter until creamy.
- Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
- Add the vanilla extract and a few drops of green food coloring. Adjust the color to your liking and beat until the frosting is light and fluffy.
- Once the cupcakes are completely cooled, frost them generously with the green buttercream on top.
- Insert a mini pretzel stick into the center of each cupcake, forming the trunk of the Christmas tree.
- Decorate with assorted colorful sprinkles as ornaments and use edible gold stars as the tree topper.
